Gluten Free Class Tonight & A Slight Glitch!

Well I had the privilege of spending an evening with an awesome group of people!! It was sad to see how many had suffered and doctors did not seem to be helpful for them. Hoping that each came away with some encouragement that they are not alone in this. Though at times it does feel very lonesome.
 
 As for the glitch, I had planned to make Bob's Red Mill Pizza Crusts and when I opened my box from Amazon.com.....lol, I saw flour inside the outer box, I lifted out the 4 pack of pizza crust mix and the bottom of the case was broke open. All the bags had some how popped open and were spilled all over. I'm thinking that in shipping a heavy box got put on top of it and the weight popped the bags open. It was a mess just as we were leaving to head to the class. Called Amazon.com and they shipping 2 new cases overnight to me.......yeah for a company with EXCELLENT customer service!!!!

Thanks for sharing your knowledge and personal stories with us....I could relate to your stories in more ways than you may realize...Good luck next week and we will be praying for a speedy recovery and we will see you in May!!

  2. Heather thank you for your comments. I'm trying to put names with faces from last night :O) Did you ask the question about your son eating gluten free? I've had more thoughts about questions since last night. If that was you, here are my thoughts. You could get some cookbooks from the library and let him pick out some recipes to help you make. Maybe take him to Aldi's and let him look for the words Gluten Free on the packages and pick out a few things to buy (within reason of course :O) I know that this is a HUGE change for you regarding eating, I try to think of it like this, kids don't have the same coping skills that we as adults do, so they tend to act out by not wanting to eat certain foods, causing stress at the meal tables etc. It's their way of handling things. Our son was 9 years old when I started, we had some days like that, but I just ignored it....lol. I put the food on the table and we ate. Once he felt a part of the equation he really started taking ownership of it and started looking through magazines and cookbooks "looking for something my mom can eat." It was almost like a game or a treasure hunt to him, instead of a MEDICAL NIGHTMARE that it was for me. hahaaha. He can still have his kid friendly snacks too like yogurt, cheese sticks, Bar S hotdogs & baloney are gluten free (regular flavors only), not the healthiest fare, but kid friendly to have once in awhile and very cheap, you can find them for .89¢ a pack sometimes. I keep them in the freezer for days when it's 45-50 degrees out and we start a fire in our firepit and roast hotdogs for lunch. I know that this is exhausting for all of you that were at class last night. Try to sit down and write out a list of what you CAN eat.
    You can eat......
    fruits- eat for desserts and snacks, sometimes kids won't eat a whole apple, but if you cut it up into slices they will gobble it up.
    veggies (steam, stir-fry in gluten free broth, dip in gluten free salad dressing)
    unseasoned meats (season them yourself with things like Lawry's seasoning salt (original flavor), salt & pepper, lemon, or any type of gluten free seasoning (like some of the Grill Mates).
    You may still want to allow him to have the gluten bread, but he will have to eat it responsibly, Mom makes the sandwich and he sits at the table eating over his plate, then the plate goes straight to the sink and the table gets washed off and hands get washed before doing anything else. You can also make up a loaf of bread into sandwiches, freeze them in individual baggies and just pull one of each day for his lunch and he can eat it at school, where gluten is not a problem. The library also has kid friendly gluten free recipe books, search the Inter-Library loan for those.
    I hope I have the right person in mind, if not I am sure that other readers on my blog may benefit.
