Bye-Bye Crockpot

Yep, it's a goner! 
Ran the dishwasher and then while unloading it I grabbed out the lid to my new crockpot and it just shattered all over the place. Big shocker!!!

Our faves are the Rotisserie Style Chicken it rivals Costco! and Refried Beans, I do add a bit of bacon grease to these

How to Tame Holiday Hassles?

Well here we are again, yet another holiday that is surrounded by food!! I do love the Christmas season because during that time my Lord and Savior Jesus Christ was born of a virgin.

But the food sometimes over shadows the Christmas parties and can make life difficult if we don't plan. Tonight was my husbands Christmas party at work. They had a wonderful party with lots of goodies and treats. I was in a hurry, failed to eat before we left and failed to bring anything with me to eat. A very BIG mistake if you want to relax and enjoy the party. I was starved through most of the party, of course I was not hungry until I started smelling all those goodies.

#9 When your husband is speaking to others, show interest in what he says.

Where has Summer gone?

Well, here we are almost to July and I can't figure out where Summer has gone. We are getting ready to send Grandma back home after her long stay, she was suppose to be here about a month, but then decided that she needed to stay until her grandson's birthday (she got here April 11), so we are sending her off the day after.

Where have we been? Well we spent an incredible week at a Joni & Friends camp with our son's birthfamily, spent 4 days visiting with some friends out of state, attended my 30 year junior high class reunion, spent a few days in Chicago visiting friends, went to 6 Flags Great America, placed in the
4-H food show and 4-H food demonstration contest and took our son to a few days of technology day camp. To say that I am ready to fall to the ground, would be an understatement.......lol. But we are having fun.

Our son met a little girl at the Joni & Friends camp, so they plan on writing to each other. She lives in another state so the pen pal thing should be fun. I need to get our pictures developed so he can send them to her, but silly me, I used a disposable camera instead of my digital, so I have to mail these off to get them developed. Pray for this little girl and her family, they are being raised by grandparents and two of her siblings have special needs. Her brother is in a wheelchair with Cerebral Palsy and her sister has a seizure disorder. So life is not easy for this family, but they are relying on the Lord.

Had a few tough things to deal with like EATING! lol......everything at the Joni & Friends camp revolved around FOOD! I got terribly sick 2 nights because they were popping corn, and for those who don't know, I'm allergic to corn and that includes popcorn!! lol. The hardest part of all this traveling was getting food that I could eat. I did eat at Chipotle Mexican Grill twice and did fine. I just had the rice and chicken. All gluten free, dairy free and corn free. Just had to make sure that they change gloves before making my food since they do serve corn tortillas. Most of our hotels had kitchenettes in them and I was able to do some cooking while at our friends home. I even brought along one of our farm fresh chickens to eat and a few dozen farm fresh brown eggs. YUM!

In getting back to life in the real world, my home is totally trashed! LOL. To say the least, we have been dropping and running, so next week we will be getting things back in order and up and running. I came across this great website and wanted to share it with you. It was a real eye opener to me. I know, I only have 1 child, but laundry does still pile up and I still have tons of dishes to do from cooking from scratch each day. Take a look at the link and tell me what you think.

Have a great rest of the summer and plan NOW for your upcoming school year. Relax outside while the kids play and have your planner book out and jot down some ideas, ask the kids what they would like to accomplish this school year and go from there. It's not too late to hit a convention, just Google and find one near you.

I came across this great resource this week and am filling mine out today!!  The weekly menu planner from the simple natural nourishing blog. This is going to be a great help in using up what I have in my freezer. I have cleaned out the bottom shelf of my freezer. YEAH!

Pantry Challenege Day 6

We cleaned out the refrigerator and had leftovers, along with corn from the freezer, canned fruit and veggies from the pantry. Sent hubby to work with cookies from the freezer and our large stash of fresh giant oranges from the local school band.
How are you doing? I have a large can of black beans, got any suggestions to hide those in something? We are not big bean eaters (well we like greenbeans......lol) and I bought those when I was on a 'lets get healthy kick.'  Yeah, the family really likes when mom gets on that high horse. lol

Pantry Challenge Day 5

I thought I would share some pictures of my stockpiles.......lol. I have a few.
First here is my stash of food that sits above my washer & dryer.
This is my NON gluten free stash of things that I need to use up.
My top of the refrigerator stash......ignore the dust up there! I'm too short to see it, so I don't dust if often :O)
My Lazy-Susan cabinet or better known as "The finger pinching spinner thing" to my toddler son back in the day. lol. Yes I have a ton of Lea & Perrins Worcestershire Sauce because the Amish salvage store has it for like .95¢ per bottle and the expiration date is 2013. YUM!
For some reason the server is rejecting my final picture, which is of a tiny cabinet that my Dh and Ds have munchies & snacks stored in. It's not real large, but it has Ritz Crackers, hot cocoa packets and stuff like that in it.
Feel free to share your stash photos with us. I've not even ventured to take pictures of the freezers yet.......lol. Maybe next week.

Gluten Free Marble Cupcakes

I got this from a friend on a gluten free/casein free group. They are yummy and I just took my first batch out of the oven. I think the next batch I will skip the marble part, I'm not a big cocoa fan. But these are still really good!! Head on over to Marcie's blog for the recipe (click here)


NO milk, NO eggs, NO soy, NO wheat or gluten, NO tree nuts, NO peanuts, NO fish, NO Shellfish, yet these taste WONDERFUL!!


You can see one missing in the bottom right hand corner, I snatched on and ate it. YUM!!
And for those of you who are not big pumpkin fans, don't worry, these are not pumpkin flavored!! Though I am now thinking that when I leave the cocoa out of the next batch, that I might add in some pumpkin pie spice. I will report back on how that goes.
