This looks WONDERFUL! I'm thinking with Labor Day Weekend coming upon us that these will be on the menu! Stop over at Queen Of Quinoa's blog to get the recipe, there is no Quinoa in this recipe  ;0)   She has a nice listing of recipes and they are all gluten free. Many can be easily made corn free and dairy free too.

Here are 6 practical tips and resources to help you save money on the
extraordinarily high costs of gluten-free foods. Plan ahead and you
really can save on your monthly gluten-free food costs- and at the
same time eat delicious, healthy gluten-free foods.

1. Focus on cooking with foods that are naturally gluten-free

Fresh fruits, vegetables, eggs, dairy products, nuts and seeds, meats,
poultry and fish are all healthy, delicious, gluten-free foods. Focus
on planning a gluten-free menu based on these naturally gluten-free
foods. Pound for pound these foods offer a lot of nutritional value
for the buck, compared to refined, processed gluten-free products.

2. Make your own gluten-free foods rather than buying expensive,
processed products

Savings can be substantial when you make your own gluten-free foods,
especially breads and snack foods. Another advantage in making
homemade gluten-free foods is better flavor and healthier ingredients.

3. It is convenient to keep a few packages of commercial gluten-free
mixes on hand. But you can save a lot of money by making your own
mixes. Measure, mix, package and refrigerator or freeze and you have
created your own fresh convenience mixes. Along with saving money,
when you make your own gluten-free flour mixes, you can customize them
to your own tastes and nutritional needs.


4. Join forces with other gluten-free families and friends to lower
costs. Websites like amazon.com and Shop Gluten Free Grocers sell
gluten-free foods in multi-pack cartons, including pastas and flours.
Amazon's Shop Gluten-Free Groceries website offers free shipping on
orders over $25. Bob's Red Mill sells 25 pound bags of several of
their gluten-free products, including tapioca flour and all purpose
gluten-free baking mix. They also sell 4 bag cartons at discounted
prices.

5. Join a local support organization. You'll meet other people, who
like you, are battling the high costs of gluten-free foods- join
forces, buy in bulk and save money.

6. Use coupons

Nancy Lapid, About.com Guide to Celiac Disease recently blogged about
a website that offers printable coupons for gluten-free products.


Tips:

Once a month prepare your favorite gluten free convenience mixes. I
like to make 3 pound bags of all purpose baking mixes. This amount
generally lasts for several weeks. Use it to make homemade breads,
pancakes, waffles, cookies and pizza crust. Making mixes ahead of time
is SO much more convenient than making mixes every time you need a
gluten-free flour blend for a recipe.

Once a week bake your favorite gluten-free breads, wrap them up and
freeze. Remember, making homemade gluten-free bread is like mixing a
cake batter. Combine ingredients in a mixing bowl. Beat. Pour in a
bread pan, let rise and bake. Homemade gluten-free bread is faster and
easier than making traditional wheat-based yeast breads. So don't
shudder at the thought of making gluten-free bread every week. It
requires less time than you think! The savings, not to mention
superior taste and texture make it worth the minimal effort!

Make gluten-free cookie batter and refrigerate or freeze to use as
needed. There is really no need to buy expensive, ready-made mixes.
Mixing and storing cookie dough, like making bread is faster and
easier than you may think.

Make and freeze gluten-free pizza and pie crusts, which become
economical convenience foods, ready when you need them. Use a food
processor and this task is very fast and again, much easier than you
imagined.

Develop a dependable gluten-free recipe file. This will save you not
only money, but time and disappointment. I have a constantly growing
"favorites" recipe file- my "go to" recipes that I know work and taste
great. This not only saves money, it's healthier.

Gluten-free raw ingredients- purchased in bulk if possible
Homemade gluten-free flour blend mixes
Motivation
Shop with a grocery list and don't shop when you're hungry!
Consult with an accountant to see if you can deduct a portion of your food costs

Mini muffins

I just took these out of the oven!! They are YUMMY!! I made a pan of mini and also a pan of regular size. I like to keep things like this in the freezer for grabbing a quick snack or a quick dessert for me at church fellowships. I tweaked it a bit, I used canola oil instead of coconut, added 1 cup of sugar instead of 3/4 (we like sweet stuff around here ;-) and left out the nuts.
These are NOT grainy or gritty like some I've made. I got them from the Gluten Free Homemaker blog

Then I will give you rain in due season, and the land shall yield her increase, and the trees of the field shall yield their fruit. We are in the rainy season of the year and the trees are abundantly full of apples, what a way to celebrate fall.

So good! I've been eating them frozen and they are great, they have an awesome taste and texture.

Summer has crashed & burned! lol

Background info
Well this has been an interesting start to summer. I became very ill the week before Memorial Day weekend and found that I have diverticulitis, fibroid tumors, my thyroid was out of whack again and I had double ear infections starting up. I got antibiotics for the diverticulitis, as a side note here I've always had stomach issues going back to early childhood.
Trip to the ER
After a day on the 2 antibiotics I started looking sunburned, had a scratchy throat and mouth, then started getting spots on my face like a teenager with acne! lol. Then had trouble breathing, after a fast trip to the ER, I found that I am allergic to one of those antibiotics, they don't know which one. During this time I was on a liquid diet from my doctor, only 7-UP and Jell-O. I was feeling pretty good, no stomach issues, then I had some chicken broth and got very ill, my friend Kathy, an RN with a DH that has Celiac Disease asked me if the broth contained wheat, I read her the ingredients and guess what it had Modified Food Starch (wheat). Kathy said to get some gluten-free broth and try that. I did, guess what? I did not get sick! Kathy has been telling me for 10+ years that I probably had Celiac Disease, I did not want to hear it! "LaLaLaLaLa blah blah blah! I can't hear you!!"

I go back for my follow up doctors appointment and tell what I have found regarding the gluten and being sick. I had a lot of time to think back to different times I had been sick and I came up with a few scenarios of being very ill over the years. I also brought in a list of symptoms I've had that other doctors have blown off over the years, turns out that I have all but 3 of the symptoms of Celiac Disease. So they did blood work, test came back negative, then I find out that you must be consuming wheat and gluten foods to have an accurate blood test, well I had been off gluten for sure for 6 days, but I had been off of it longer since I had been ill and not eating much at all for the last few weeks. What a waste of money! They don't do the genetic testing here, so that is out for now. They want me to see a GI specialist, not sure what I am going to do about that, I am praying about it all.

We attended the IAHE conference (more on that later) and celebrated our 20th wedding anniversary this past week, I was not sick at all! My DH would ask me "Do you need to lay down and rest?" "How are you feeling?" "Do you need to find a bathroom?" He was so use to me being sick, he was actually able to enjoy an after meal cup of coffee instead of his usual: grabbing the check, while I run to the bathroom, then heading straight to the car so I can get home to use the bathroom AGAIN and then lay down. (this really has been my life for years!) I kept saying "Honey, am I dreaming this? Or was it really not that bad all these years? I just can't believe we are sitting in a restaurant and I ate my meal and I am NOT doubled over!"
16 days later
I have been gluten-free and wheat free for 16 days and guess what? NO STOMACH problems!! No symptoms what-so-ever! I am feeling refreshed, more energy, less tiredness, clearer thinking, and I am not hungry all the time, for years I was just starving day and night. I did try to have some dairy, a slice of Munster Cheese and that gave me a bit of a stomach ache and I ran to the bathroom......lol. Guessing that dairy will still be out of the question, but I was hoping.
Today
I will be honest that it sure seems to be easier to not have dairy than to be wheat-free and gluten-free! I am learning a lot and will pass on the info here and some great reads/websites I have come across.
