HAPPY EASTER & A RECIPE

We plan to start our day out with fellow blogger Audrey Roberts receipe for Gluten Free Cinnamon Roll Cake (tastes just like cinnamon rolls, but without all the work!). Audrey blogs over at www.mamaknowsglutenfree.com/ and boy, oh boy, does she know gluten free cooking!

Easter lunch menu will...
Spiral Sliced Ham
Mashed Potatoes
Green Bean Casserole
Deviled Eggs
Lamb Cakes (Vanilla pound cake shaped like a lamb).

Still needs decorated, but too warm to frost yet.
Lamb cakes are a family tradition, my parents would always make a bunch of these lambs and bunny cakes. They would decorate them all up some in powder sugar, some with shredded coconut, all would have jelly beans, Easter grass and chocolate Easter eggs. They would give them all away to friends and family. Ours can't be given away now, since we ate the ears off of them already hahaha.  

We probably would have a more exciting menu, however hubby is laid off due to the COVID-19 non-essential rules and so I am doing a pantry challenge to use up what we have on hand. I also really don't want to have to brave all the TP crazies at the store either LOL. 

The homeschooled young man is away at college and probably eating a can of SPAM for his Easter meal unless the university is planning something special in the dinning hall. 

This all puts life into perspective and helps us to focus on the real meaning of Easter, it's not the food or the family that is truly important. It's Jesus.

I am really surprised that this is one the most popular blog post!! It's very near and dear to my heart, but I was thinking that most people stopped by (over 100,000 of you!) to get the yummy recipes! But I guess I’m wrong. Here is on of the most popular blog post.

POKING FUN IN THE HOMESCHOOL

 With the Homeschooled Young Man going into his junior year of high school in the fall, I've been doing a lot of reflecting and thinking back on our homeschool years.

We have been downsizing our homeschool materials for an upcoming used curriculum sale and it has brought back some fond memories of days gone by.

Just today as I was sitting in my rocking chair, a chair that holds many fond memories (our church nursery was remodeled and they bought brand new rocking chairs and gave away the old ones. They were delivered to my house and what a blessing it was to sit down in one, pick up the phone and call my out of state friend and say "Guess what I am doing? I am sitting in one of the rocking chairs that we both rocked our babies in!" It was a precious moment, remembering those days, for her 19 and 16 years ago, for me, just 15 years ago.

Ok, rabbit trail here; back to the title of this blog post Poking Fun In The Homeschool...lol.

Finger Pointer Thingy
My son walked up to me this morning and poked me in the side with that finger pointer thingy. I am very ticklish and I was just giggling like a schoolgirl as he kept poking me with it. The more I laughed the more he poked. I was not so much giggling at the tickling as I was at not having seen that finger pointer thingy in a very long time! He came across it as he was digging through his closet the other day.

I remember the day I bought that Finger Pointy Thingy, we were at a Scholastic Book Fair sale and I was buying my teaching supplies, like a real teacher don't ya know? Hahaha, it was one of our first years of homeschooling, ya know the one where you have the Homeschool Momma jean dress on. Actually, I wore a cute denim apron that my Mom decorated up with buttons that had pencils, a school bell, books, and cute stuff like that sewn on. Watch out, we had the student desk, a decorated classroom, my student wrote with feet flat on the floor for penmanship, pets were banished from the schoolroom until school was over. Ya, you're gettin' it now! lol. Yes, I was one of those 8:20am-3:00pm homeschoolers in the beginning. We even had school colors and a school mascot, we were Home of the Pugs!

I had big plans for that Finger Pointer Thingy, it was going to keep my boy's eyes focused on the board, it was going to keep him engaged, and it was going to force information into his little brain! I was going to fill that bucket (child) up as full as I could with information that he could spit out on a test!! You bet ya! He was going to learn!

Long about October of that same year, the Homeschooled Young Man asked if he could do his history on the couch with the dog, I told him as long as he got his work done. Then next thing you know he was under the kitchen table (his all-time favorite place) on the floor with the dog doing science. A short time later, he discovered fort making with sheets, blankets, and kitchen chairs to study in. These shenanigans nearly ended our homeschool career before it really got off the ground when Homeschool Dad saw what was going on. Because you know, homeschooling dad's think that learning can only be done in a straight backed chair, a desk and feet flat on the floor.

Over time I sold the desk, took off my cute denim apron (I still have it), took down the classroom decorations and started HOME SCHOOLING. That is school at home, or better known in the teenage years as car schooling since we live in the middle of nowhere and I am driving the Homeschooled Young Man back and forth to job shadowing, 4-H, hospitals, doctor's offices, the medical school, and volunteering. We just pack up the schoolbooks, pile into the car and off we go! His chemistry book seems to be intriguing to many doctors and starts up some interesting conversations with them. They have shown him apps that they still have on their phones for the Periodic Table and chat with him about their own struggles in O Chem.

After attending my first homeschool conference, I also realized that teaching is not simply filling a bucket with information that can be spit out on to a test. That one really rang my bell.

My homeschool décor has also changed; I have cute laminated quotes and pictures all around our homeschool bookshelves. They perk me up on a long day and get me through the tough times.


The picture below is from WWW.TheHomeschoolMagazine.com I've had it for years on my refrigerator and no matter how bad my day is, I can look at it and just laugh, I don't know why it makes me feel happy, but it is just so funny!


You can see how our homeschool has evolved over time, changed and morphed into something wonderful and unique to our family, now do you see why I was giggling so hard when being poked with the Finger Pointer Thingy? It is amazing how a little Finger Pointy Thingy can bring back so many memories.






Gluten Free Grilled Rosemary Pork Chops

Just in time for grilling! Gluten Free Grilled Rosemary Pork Chops recipe can be found over at the Whole Food Mom on a Budget blog. She has lots of yummy looking recipes, not all are gluten free, but most could be easily adapted with a few small changes.

We don't have the grill ready to go so I think I will make these on the stove. YUM!

Gluten free, Dairy free, Corn free hamburger bun recipe...let the grilling begin!

YUMMY Gluten Free, Corn Free and Dairy Free hamburger bun recipe from the Gluten Free Homemaker hamburger buns. They look mighty fine! Head on over and check out the recipe on Linda's blog. They are pretty easy to make too.


These are my go to hamburger buns when we grill out. Mine don't look as good as Linda's from the Gluten Free Homemaker, but they taste GREAT. Let me know if you try them and what you think of them.
Read her comments section, someone mentions freezing them for later use and also using a premixed flour blend.

Our homeschool has tended towards the boxed curriculum (we have started branching out in recent years though) but it was always missing something. I’ve found what was missing and it was SchoolhouseTeachers.com, there are all sort of goodies to find on this site. 

It just so happens that my son was given an acoustic guitar as a gift and he has been getting library books on how to play the guitar, but they have been either way over his head or contained music that does not fit our family values. As we are reviewing the Old Schoolhouse magazines website SchoolhouseTeachers.com we came across the guitar lessons.

Mom & Dad have no trouble with reminding our son to practice his guitar because SchoolhouseTeachers.com is so much fun to use!
Our son has only been using the guitar lessons from Schoolhouseteachers.com for about a week and a half and by no means is he jammin’ out on the guitar, but he is making music and not just noise anymore. LOL! 

The videos are AWESOME! It's great to go back and watch them again to get the finger movements down pat.
A great feature of SchoolhouseTeachers.com site has unit for parents, it has a monthly menu feature.

Another area that I liked was the logic section. We have always struggled with teaching logic in our homeschool, so I was thrilled to see Logic on the drop down menu under middle school. I like how the lessons are set up so that my son can just go right in and get started. It has helped foster independence on his part. I know that we have a few years to go before college, but when I look at the SchoolhouseTeachers.com website, I’m thinking about how using this site will help our son out in the long run. Online college classes are the future for many of our children and what better way for them to be prepared than by teaching them in pre/k & elementary, middle school and high school with methods that they will continue to use down the road.

Olive Garden Gluten Free Recipe Hack!

Have you ever found a great recipe and you think "Oh, never mind it's full of gluten." and then move on? Well, it's time for a change, look at recipes and see how you can adapt them. I use a lot of my old recipes and just change them up. Yes, I have had a few flops over the years, but mostly successes. Don't let being gluten free take away the enjoyment of cooking, there are plenty of wonderful tasting recipes out there that you can make gluten free!

Here is an Olive Garden gluten free (and dairy free if you need it that way) recipe hack, you will see in the original recipe in the link and I will share what I did to change it up so I could enjoy it!
Olive Garden-Style Slow Cooker Zuppa Toscana

2 cups kale or Swiss chard, rinsed and chopped (I am not a fan of either of those so I just chopped up some fresh Spinach leaves and use that.)

1 cup heavy cream (I used about 3/4 of a cup of Soy Milk, you could use whatever you want, soy, almond, rice ect but use less than the 1 cup as it won't be as think as the heavy cream. If the soup is not thick enough for your family add a bit of cornstarch or rice flour or BetterBatter flour and stir until thickened to your liking.)

Sprinkle with your favorite dairy free cheese.

I had to leave out the garlic as it tends to give me issues.

I think turkey sausage would also work in this. I also think that a gluten free Kielbasa would be nice too, I think my guys would even like a grilled bratwurst chopped up in it.

Announcing the MOST POPULAR BLOG POST of 2014!!!

Gluten Free McDonalds Iced Cheese Danish Recipe. Yep there you have it folks...the MOST POPULAR BLOG POST of 2014!!!

Anyone ever remember eating a McDonalds Iced Cheese Danish back before going gluten free? Those were my favorite with a nice hot steaming cup of coffee! Which would then turn into running to the bathroom for the next 2 hours, terrible stomach cramps and bloating. Well fast forward to today and see how this recipe was born. I had posted this recipe gluten-free homemade culvers butter burgers buns and as I was thawing out the buns and eating them one by one through out the month, I thought, hhhhmmmm something tastes familiar here. Well I came across a recipe for cheese danish that was made with gluten ingredients. I toyed with the idea of making a gluten free danish, and thoughts of the McDonalds Iced Cheese Danish began to dance in my head! lol.


So here is what I came up with...

Make this recipe with me...bake a batch of the above recipe from my link, using milk (whatever kind you want, not the water, I like the water ones with hamburgers and milk ones with the danish recipe).
After the buns cool, slice them in half to separate the top and bottom bun. Then whip up this recipe...

Filling:
2 8-ounce packages cream cheese (dairy, light, non-dairy)
1 cup sugar (try fake sweetener if you like that instead)
1 teaspoon vanilla extract
1 egg

Glaze:
1/2 cup powdered sugar (I used corn free)
2 Tablespoons milk
1/2 teaspoon vanilla extract

Method:
Preheat oven to 350* degrees and grease a 9x9 or 9x13 inch baking pan (depends on how many you make). Beat the cream cheese, sugar, vanilla, and egg together until smooth. Place buns cut side up in the baking pan and spoon on the filling. Bake for 20-35 minutes until the top is golden brown. Top with glaze after cooling for 20 minutes. These are great frozen too. I placed them in sandwich baggies and have eaten them frozen for breakfast. Using soy milk 2 danish (equal to a full bun-2 halves) is 6 WW points. YUM!

Not burned, but caramelized, oh, these were mighty fine!
These were so good! They may not be as pretty as the ones from McDonalds, but my family loved them...lol. I made them some special ones just for them. I took whole wheat bread, buttered it, sprinkled it with sugar and then added on some of the filling, baked it just like above and added glaze after they cooled. BIG HIT!!

Buttermilk Ranch, don't let the name fool you, there is NO buttermilk in the seasoning. I use this to make dairy free salad dressings and dips. This is also really good sprinkled on mashed or baked potatoes. And super yummy sprinkled on baked chicken breasts.

I like how I can buy small or medium sized bottles or I can buy a larger size bag. I buy the Cake Spice and the Buttermilk Ranch by the bag full!

Stop by Penzeys Spices website or one of there brick and mortor locations. I've been to a few of the locations and love all the recipes that are sitting out by the spices. Like them on Facebook too!

We are pinching penny's right now in our household due to my husband being hurt at work and ground beef tends to go a long way in recipes. I plan to make a number of these in the near future.

Many of these recipes look like they could be easily changed to gluten free and also look freezer friendly. Easy swap outs would be regular noodles for gluten free noodles. I think that these recipes will be easy enough for a Gluten Free newbie to try out and enjoy.

Lynn also has a Gluten Free button on her site for more recipes. Always check your ingredients and make sure that you are using gluten free.

What The Fork Food Blog has this incredible looking recipe for Pumpkin Cake with Cream Cheese frosting.

Now if you are dairy free don't cringe!! You can make this with some yummy dairy free cream cheese. I am going to make this tomorrow and I will post my thoughts on it. I can't wait to take the damp chill out of the house with a cake baking in the oven.

I've looked around Sharon's blog and WOW!!! Tons of yummy looking treats on her blog, many look like they will freeze great for holiday baking too.

p.s. As we move into the holidays and get busy, please be watchful as to what you eat and cook with. Even though you are busy, don't make careless mistakes that will make you sick. Keep gluten free snacks with you and when you are out on the town, check the restaurant menus before you step through the door or go through the drive thru. Did I tell you that Red Robin is my favorite place now? No!! They did not give me anything for saying that, but I will tell you that there is nothing like their French Onion Soup (ask for gluten free and make sure they hold the croutons and bread) and an order of fries (fried in a dedicated fryer!) I would say that the soup rivals Panera Breads or St. Louis Bread  Company's gluten filled french onion soup.

YUMMY Fall Gluten FREE Recipes

As you have read, my focus has been on getting the new homeschool year planned out and started...next week I will share how our first week of homeschool crashed and burned, yet was profitable for the Homeschooled Young Man.

As I was taking a much needed break from life, I came across this wonderful website from My Gluten-Free Kitchen...YUMMY is all I can say. I printed out several of her recipes and plan to make them this week. I just love the fall time of year! I want warm, soft foods like casseroles and Michelle over at My Gluten-Free Kitchen has just the recipes.

Here recipes are all gluten free, but some of her links to other websites/blogs do not have gluten free recipes, but many of them that I looked like could be easily made gluten free. Such as replace soy sauce with gluten free soy sauce or replace noodles with gluten free noodles. All easy fixes so check her out!

Back To College For Me (part 2)

In my last blog post I said we would revisit "How to survive gluten free when you are away from home and there is a slight glitch in the food planning." So here we go...

When you have to be gluten free for medical reasons you just can't cheat. After sending in all my forms for the Academy that we were attending, I thought that food would not be an issue. So I just brought a few snacks with me for the 4 day adventure that we were embarking upon. But there was a glitch.
 
Day 1. My cooler was packed with some string cheese and deli meat just in case (can you tell I have traveled a bit in my day? But when I opened it up the night of Day 1, the ice packs were warm and so was the food. It had been in there about 12 hours and I had to toss out the food. So I had about 1/3 of a can of Pik*Nik original shoestring potatoes, a jar of peanut butter and 3 of the new Aldi Foods Live Gfree gluten free bars on my person. Not enough to live on for four days.


I head to dinner...it was a catered in picnic, I had a plain salad and HUGE baked potato. YUM! that I parked my car 5 miles away from our dorm on campus and one of the Headquarters staff members graciously took me in her own car in the pouring rain to the grocery store. A store that I was not familiar with and I rushed through and grabbed some lunchmeat and canned fruit, we had things to do that night and we needed to get back to the dorms. What I did not notice was that the lunchmeat package (though it seemed large) contained two servings of meat; the slices were thin but folded over in the package to make it look larger. So note to self, look at number of servings on package!

Day 2. Found hard boiled eggs and some fruit on the buffet that was away from anything containing gluten. Got in the lunch line early and got to the salad bar before it got too messy. Grabbed some veggies, black olives, and a slice of deli meat from my stash. Dinner grabbed a slice of deli meat from my stash. The Chef did tell me that everything was gluten free including some sort of a pasta dish with shrimp in it that night. The pasta looked too good to be true to be GF and he turned out to be wrong when I asked another worker, thankfully I did not eat any. Skipped dinner, but later in the night at the bowling alley I was able to buy a water and PayDay candy bar (It was the highest protein candy bar I could find).

Day 3. Chef tells me that the sausage links (but not the sausage patties, weird I know, why add gluten to sausage, they were Vegan so maybe that is why?) are GF...YIPPEE!! Boy hot food never tasted so good. I think it was Cheri that told me they had Udi's bagels up on the bread bar, they did, (no gluten free toaster for those with Celiac Disease...remember that 1/65th of a teaspon of gluten is enough to cause our small intestinal villi to die off, so skip the regular toaster.). I've never eaten an Udi's bagel before since they cost around $7.00+ for 4 bagels. That morning I had part of a cinnamon raisin one, I wrapped the other half in a napkin to take with me to put peanut butter on later for lunch. Felt like I was stealing until one of the other chaperones pointed out a sign that said "Take a snack for later." But sadly, the bagel did not hold up for lunch, it was hard as a rock and crumbled (yeah, gluten free is not like the real stuff).

We were having Papa Johns for lunch, but thought I better skip that not knowing about the lunch meat being GF or not and if they had changed gloves. So I thought I would pop into the dorm dinning room to see what was for lunch. I talked with the Chef and he tells me that I can have anything on the main buffet except the hotdog buns. YES! Hot fresh food...remember that sheer irony I mentioned in the previous blog post? The sheer irony of the gluten free green beans, mashed potatoes and turkey breast meal that was on the lunch buffet, the one day that was not included in my meal plan card...LOL. I have witnesses that can testify to my saying the night before this meal appeared on the buffet "I want something hot like green beans, mashed potatoes and turkey." Poof there it was! I'm thinking the Lord was trying to teach me grace and humility through all this.

Headquarters staff went above and beyond to get me fed, again one of them took me to the grocery store earlier in the day, I got more lunchmeat and more canned fruit. That night was the big banquet and awards night, they brought me Chipotle's rice and braised carnitas and it was so good!

Day 4. I had bacon and fruit.

So all in all I survived, thought I might have lost some weight, but some how I stayed the same, even with all the walking we did and water I drank. Yes, I could have cheated, gotten very ill...did I mention all that walking...lol...don't want to get ill from gluten when there are no restrooms nearby!!!

A few parting thoughts:

There is nothing more freaky than not having access to food you can eat, I know of all the things to have to worry about in the world, but it can freak you out!

Things might appear safe to eat, but are they? Scrambled eggs were offered pretty much every day, but I was told that they were not GF. So always ask, institutional food is not made the same way we cook at home; it's made to withstand heat and to not dry out on buffet lines. Think about times you have gotten sick eating scrambled eggs at IHOP or other chains, many add pancake batter to make fluffy omlets.

Even when you think all will be well with your trip, camp or other outing, always bring some foods that you can eat, because no matter how well things are planned out, glitches will occur. Glad I got to live through the glitches with a great group of people!

Back To College For Me (part 1)

We have had some very busy days this summer. We drove over 3,000 miles, visited my Mother in the hospital, packed up all her personal belongings, sold her house and car, spent a day at the Gulf of Mexico, went to the Creation Museum, found some great hotels in the process, attended an academy for 4 days and (taking a big relaxing breath since we are almost done with all our running) spent 2 days at the medical school working on Problem Based Learning. In a later post, I will have some pictures to share.

The Homeschooled Young Man learned a lot at his Molecular & Cellular Biology Academy that was held at a major university and had an AWESOME time. I might add that I had an awesome time too! I got to chaperone a fun group of girls and had a great time with some of the other chaperones on my dorm room floor (and from other floors too). The Young Man met a girl that wants to be a Physicians Assistant, always cool to chat with another teen that has a passion for real life things and not just for playing video games or watching the latest movie.

One of the chaperones on my floor Cheri, homeschools and we were up late chatting about health, kids and of course, a topic that is always close to my heart HOMESCHOOLING! Pretty cool to hear about how others educate their children, each has a different approach, but our hearts are in the same place: creating a learning environment for our children to thrive in, teaching a love of learning for a lifetime and guiding our children to attaining their goals and dreams.

Toss Kruti into the mix (another chaperon on my dorm room floor) and we had it made in the shade! (though we did sweat a lot!!!) The three of us meshed, laughed, chatted until the wee hours of the morning. Then woke a few short hours later to tackle the day and lead our charges. I think the only thing missing was a nice pot of hot tea! Next year girls.

What chaperones look like when they sleep 15 hours over the course of 4 days lol. After the month I had just lived through these two ladies were like a drink of cool water in a dry and weary land. I thank them both for that. My soul has been refreshed and I am ready to tackle life again.
On a side note Kruti lives about 15 minutes from where I grew up and she knows the Mom of a girl (Lana Banana) I went to grade school and middle school with. Pretty neat.

Met some other chaperones along the way that we spent evenings visiting with while the teens enjoyed their playtime (bowling, billiards, giggling, dancing, did I mention giggling? LOL)

I so enjoyed meeting the chaperones that had graduated from the university, I liked hearing about what it was like back in the day and how things had changed, such as less grassy areas, new buildings, a sorority house no longer on campus etc.) I also enjoyed hearing about what their teens were interested in and their goals in life and what they were doing to achieve them.

Kruti and I had a chance meeting (you know me, nothing is by chance it was providential) with a young man that we found out lives near me. He has friends that attend the medical school program with the Homeschooled Young Man. Please pray for the teen we will call him C, he has some dreams and desires for the future, but needs some good guidance to get there. Several chaperones had to walk I would say about a mile with C (Kruti & I hung back with C) and just about the time we got to our destination, I asked him something like "So what did you think of being stuck with these two moms on the walk over?" C says "Well at first I was thinking, gee I'm stuck walking with these 2 Moms, but now after spending time with you both I am glad I did, I learned a lot." What a blessing to hear a teenager that is going into his senior year of high school say this. Remember the saying "People don't care what you know, until they know you care!" I said goodbye to this young man on the last day, shook his hand and told him "I expect to hear great things about you in the future."
 
Another blessing of the academy was seeing some kids that were loners, who liked to listen to Ipod, watch sports on TV or read by themselves brought out into the fun by some other teens who took the time to approach them, spend time with them and help them to enjoy themselves. Remember the saying "People don't care what you know, until they know you care!" I'm thinking that this blog post might have an underlying theme to it. To see these teens laughing, smiling, and having a new spring in their step was awesome to watch.

Here is my top 10 list for the academy...

1) Late night gatherings in the lounge (why do we always get a second wind when we put the children to bed?) LOL

2) Texting to Kruti but accidentally sending it to the case manager of the hospital that my Mom is in...lol. And the case manager sending back a text answering what I texted for Kruti...lol. Texting my husband saying "2am bathroom break, missing you and I love you, can't wait to be home with you!" and sending it to my Pastor by accident, who replied that even though it was 2am he was happy to see that my husband and I were still in love! Note to self  DO NOT TEXT late at night when you are tired, because bad things can happen. My SIM card is all goofed up.

3) Meeting "The Other Guy" one of the chaperones that I nicknamed when we were playing board games with the teens, he had stepped out for a minute while I was writing names down on the score sheet and I did not know his name. He was homeschooled all the way through high school and talked to me about his life growing up and his college experience (if I remember right electrical and/or mechanical engineering). I am refreshed and ready to jump into the coming school year full force because of "The Other Guy." I got a free homeschool convention to boot (I think Kruti did too).

4) The topic of raising poultry came up at the academy and here is a picture showing the difference in a meat bird and a laying hen.

  5) Getting rides in the mini busses that they called "Turtles", my tired brain found that funny. One of the teens had on a backpack that was a green turtle shell (she wore it for several days) and I would picture that backpack every time someone would mention the "Turtles". LOL
 

6) The sheer irony of the gluten free green beans, mashed potatoes and turkey breast meal that was on the lunch buffet, the one day that was not included in my meal plan card...LOL. I have witnesses that can testify to my saying the night before this meal appeared on the buffet "I want something hot like green beans, mashed potatoes and turkey." Poof there it was! I'm thinking the Lord was trying to teach me grace and humility through all this. Headquarters staff went above and beyond to get me fed. I got Chipotle's rice and braised carnitas that day. More in a later blog post about how to survive gluten free when you are away from home and there is a slight glitch in the food planning.

7) Seeing the teens work together (delegates, planning committee and others) to make things happen.

8) The Awards Night was really neat for the Homeschooled Young Man because he had just this week finished reading the book Do Hard Things: A Teenage Rebellion Against Low Expectations by Alex and Brett Harris. I think that this book should be required reading for all 13-17 year olds.

Gluten Free Eating Just Got Cheaper!!

Gluten Free Eating Just Got Cheaper!! Aldi now has a full line of gluten free products! Aldi a German company has always clearly labeled their foods as gluten free (if they are) and that has made for easy shopping for me. I just glanced at the label and if it said gluten free I bought it. No more searching the ingredient list. The new US labeling laws have been passed but not yet implemented by food manufactures across the board.

Aldi now has gluten free Mac N Cheese, granola bars, cake mixes, granola cereal, cookie mix, pizza crust mix, cornbread mix, pizzas, brownie mix, baking mix, stuffed sandwiches (like Hot Pockets), lasagna, stuffed shells, pancakes, soft baked cookies, chicken nuggets and pretzels.

Now mind you these are not available in all areas and I also can't find the ingredients for these products to check for other allergens. Sorry about that, I will have to go to Aldi and I don't have one near me, but I will go check it out in the near future because chicken nuggets sure sound good!

Gluten Free Weight Watcher PointsPlus Recipe sites?

Does anyone know of any good recipe sites for doing Weight Watchers when you are gluten free?
I know a lot of the flours that I use don't have any nutrient info on the bags since I buy them in bulk at the Amish stores. And with the combo of allergies that I have I don't buy much pre-made foods, so I have to figure out points by hand.
Pretty feet, but to be honest they are not mine  :)
What are your favorite Gluten Free Weight Watchers PointsPlus Recipes sites? I have found a facebook group that seems pretty good, but ya know I am working on cutting FB out of my life, so this is a tough call! lol. WW and Allergen Free facebook group.

Gluten Free, Dairy Free, Corn Free recipe....YUM!

I was cleaning out the refrigerator and found some goodies to make these Cheesy Potatoes with Bacon.
 
Moe's Easy Cheesy Bacon Taters
I sliced up some potatoes, fried them up in some oil, drained them and then added on some cheese (use dairy free kind if you need to) and then crushed up some crisp cooked bacon. YUM! Easy meal to go with scrambled eggs. Sometimes something good comes from cooking with scraps.

Chicken with Gluten Free Dumplings...warm winter recipe just for you

This looks so yummy chicken gluten free dumplings using my favorite brand of Gluten Free products from Hodgson Mill!! I plan on trying this recipe very soon. I will let you know what I think. I know one thing for sure, I think it will be cheaper to make than using my normal GF Bisquick.

Gluten Free, Corn Free, Dairy Free Cheesecake!

With fall being here, I love to cook more. I needed a birthday cake for myself and I was thinking CHEESE CAKE! So I decided to head to the grocery store and I found my fall season favorite Silk Soymilk Seasonal Nog and there was a yummy recipe on the back for Eggnog Cheesecake! SOLD!!


Eggnog Cheesecake
16 oz cream cheese softened (regular, light, dairy free)
1/2 cup sugar (don't tell, but I put in 1 cup)
2 Tbls flour (I used Better Batter)
1/4 tsp salt
1/2 tsp nutmeg (don't tell, but I did not have any, so I used Penzey Spice's Cake Spice)
2 Tbls dark rum or 2 tsp vanilla (I used 4 tsp Vanilla)
3/4 c Silk Seasonal Nog (any flavor will do)
2 eggs (or egg sub)
It called for a graham cracker crust, but I just greased my pan and skipped the crust
Preheat oven to 325F, beat cream cheese, sugar, flour, salt and nutmeg. Then add in and beat vanilla and Silk in. Then beat in eggs. Pour into prepared pan. Bake 25-30 min. I had to go almost 40 min because my oven is a bit off. Just insert a knife in the center and when it comes out clean it's done.  Chill and yields 8 servings.
 
This was so good!!!  I had to freeze the rest of it today so that I would not eat anymore of it! lol.  BTW I sampled it frozen and it does not freeze solid, but has a very nice texture frozen. This is for sure a Thanksgiving recipe that I am making and freezing ahead of time. Even with no crust it was wonderful. The edges get nice and brown and have that fancy New York Style Cheesecake taste.
 
Now for those that like a crust, you could make your own or use a prepackaged gluten free graham cracker crust. Always check ingredients even though I say mine are GF, CF DF just to make sure that I don't miss something.

We have been super busy around here, finishing up the TOS Review Crew year, got a couple of really cool reviews to share with you in the coming days! Spent a few days out of town and have some neat things to post about when life slows down.
