Gluten Free Grilled Rosemary Pork Chops

Just in time for grilling! Gluten Free Grilled Rosemary Pork Chops recipe can be found over at the Whole Food Mom on a Budget blog. She has lots of yummy looking recipes, not all are gluten free, but most could be easily adapted with a few small changes.

We don't have the grill ready to go so I think I will make these on the stove. YUM!
Enjoy!

Summer Is Right Around The Corner, Are You Ready???

Summer Is Right Around The Corner, Are You Ready??? I am not ready for shorts weather and heading off to the beach. I have taken the plunge and joined up with SparkPeople.

Come see what it's all about, I spent about an hour perusing the site and getting to know it. Sort of reminds me of a knock off of Weight Watchers online, but the really cool thing is that it's FREE!!  And ya know, we all like free!  There are mobile apps too that you can use from them.

I really like the way that the nutritional tracker keeps track of your day for you including fiber, vitamins, minerals etc and not just calories, fat, and carbs.

How far can we get between now and summer with our weight loss? Join me for motivation and some menu ideas.

Here is to less of us this summer!

Surgery Anniversary Date! WOW!! And Some Updates

WOW!! Surgery Anniversary Date! It has been a year ago today that I had my surgery and I feel amazing! I still have some weirdo ache in my side, but I think I can live with that! Feeling totally blessed by all those that prayed for me and took care of me in my time of need. You are all so AWESOME! Keep praying 1 Corinthians 3:6  "I have planted, Apollos watered; but God gave the increase." Because I passed out a lot of Bible tracts and has some opportunities to share the love of Jesus Christ, those opportunities will need to be watered and God can give the increase through prayer! James 5:16b "The effectual fervent prayer of a righteous man availeth much." What an awesome thing it would be to know one day that YOU were the prayer warrior that allowed Salvation to happen for one of these dear people!

My hubby asked me last month "Was your surgery last year or the year before?" LOL...I think that it really took it's tole on him emotionally and it's just now catching up to him. He is the kind of guy that just plows through everything when it is going on, acts like nothing is wrong and then later it hits him like a ton of bricks. I think God made men to be somewhat like that, so that they can carry on when times get tough. So prayers for him would be appreciated.

Bio-Chem lesson
Some updates for you, our school year is going amazing for the second semester, first semester always seems a bit off, but we go like crazy in the winter time! I must say that I am all for buying
pre-made science kits, save some $ for these at convention to save on shipping, so worth it in the end. We have done EVERY experiment so far and a few extras! YOWZA that is a real accomplishment for this homeschool science phobic Momma!

I learned to make a high school transcript this year, since I had to turn one into the college. I am so thankful for the records that I have kept.

The medical school program for the homeschooled young man is going very well, he is learning so much and having such fun! The program is really run well. He was so sweet at the last meeting, he had gotten ink pens that look like medical syringes and some intestinal shaped bubble gum in his Christmas stocking this year, he took some with him and shared with the other kids in the program. They loved it! He also went to the medical school library and bought some used textbooks. So he is stocked up on summer reading.

Still working on getting the house de-cluttered of papers and such that somehow accumulated over the past year. It's coming together, though slowly.

I've got 25# to lose by my doctors appointment in July...lol. And I've gained some during my laying around recovering for 3 months time period that I have yet to lose. So as you will see in another post I am working on that goal. My doctor says he will high-five me in the office if I lose 25#...LOL...if you only knew this doctor, he is so laid back, he ranks right up there with my husbands family, so it will be a real treat to witness this! Got to love a doctor who gives a challenge and a reward for completing the challenge  ;-)  The homeschooled young man has said he wants to come to the appointment just to witness such act!  LOL!!

Take care,

Eviliptical: Is that a real word? UPDATE

Well June first has come and gone! I made my workout goal and had set another one. I wanted to do 30 minutes on the Evilliptical (Elliptical machine) and 4 miles on the bike. Well today I went for the gold but fell slightly short. I ran out of time before the health club closed, I fell short by .25 of a mile. I know that I had the strength and energy to do the rest, but not the time. So Monday July 1 I plan to hit it again and reach my goal.

My new goal is to add 2 miles on to my biking. So 30 min on the Elliptical and 6 miles on the bike by Aug 1.  After I reach that goal I am thinking of staying the same time/distance, but upping the resistance on each machine. Boy does it ever feel good to be back in the saddle!

Now if I would ever get my newest Mayo Clinic results I would be THRILLED!

Enjoy your weekend.
1 Corinthians 9:24
Know ye not that they which run in a race run all, but one receiveth the prize? So run, that ye may obtain.

Permission to whine?

I finally went for allergy testing, nothing for wheat (they still think that I may be gluten intolerant) showed up but corn did and corn is also IN EVERYTHING and causes stomach issues when you are allergic to it. Corn allergies can actually mimic Celiac Disease (without the villi being effected).
So I pretty much have solved my problem with going wheat free since by not eating processed foods I pretty much cut out corn too by accident. And the 2 times that I thought I had gotten gluten last summer, I think it was actually corn. The one time I got sick I was eating Puffed Corn snacks and the other time I had Fritos.

Both Gluten and corn allergies are very similar in the way that the effect you.

So no corn, corn syrup solids, cornstarch, high fructose corn syrup, corn syrup, dextrose, sucrose and all those other fancy junk sugars, ect. Corn does not have to be labeled in the USA since it's not considered one of the top 8 allergen :O(
They can sneak it in under names that we would never think of as CORN.

I am also allergic to

watermelon
red apples
grapes
pears
peaches
bananas
apricot
strawberry
raspberry
tomato
sweet potato
corn
almonds
Scallops (I don't like seafood anyway!) YIPPEE!  lol.
Thankfully I'm not allergic to chicken or eggs! We'd have to sell the farm.  lol

So any one want to refer me to a blog about corn allergies and cooking?

Here are some interesting places that corn hides, baking powder, powdered sugar, table salt,
hot dogs, candy, frosting, cold cereal and many more things.

I'm really thinking that the Lord is working with me (feels like hammering me!) on not making food a little god in my life. I love food and I love to cook. All the years that I was sick with stomach issues (we now know I was sick with food allergies) I spent my days thinking "What am I going to eat?" Where do I have to go today & what time should I eat so that I am not sick away from home?" So pretty much my thoughts revolved around food and what and when to eat so that I could function in my daily life. There are foods that I can eat, I just need to THINK before I eat (who wants to do that?). I have the "wilderness attitude" that the children of Israel had. "I'm tired of Manna and I'm tired of quail! I deserve better than this!"  Read the book of Numbers chapters 11 & 12 in the Bible and you will understand what I am talking about.
I would covet your prayers in learning to deal with this. I go back to the doctor in one month to try some sort of rotation diet (not sure what that is).
