What have I been up to?

Well here is what I've been up to since September 9th. Hopping around on crutches and waiting for my Ortho doctor visit. I found out today that I broke my foot (in a hard to heal spot :O( no wonder I've been in so much pain for almost a month! The doctor looked at the X-ray, looked at my foot and then looked at me and said "You've been walking on this?" lol........yes, I have! lol. What else could I do? Sit and do nothing?

My dear husband painted my toes so that I could have pretty feet (ok, I'm not saying my feet are pretty enough to model sandals........lol) in my ugly blue cast, I wanted a purple cast, but they had run out of that color today. I go back at the end of the month for a recheck to see how it's healing. I'm not doing real well in the area of crutches, hubby keeps saying "Go, Go Gadget legs" lol.

Homeschooling The Fear Factor

Now I know that not everyone that reads my blog homeschools, some of you have thought about it though and are fearful. I came across this great blog post about fear and homeschooling. It's a good thing to have some fear, that way you will make a serious decision and not just jump right in. Home education is a lot to think about and a big task, but the out comes and rewards will last into Eternity.

Be encouraged and not faint hearted.

Pizzelle Cookies: gluten & corn free!

I did some cooking yesterday, I found some Gluten Free Bisquick at our local salvage store for $2.49: that is a BARGIN! It's almost $5.00 a box at our grocery store. I found the Pizzelle recipe on the ezgf blogspot checkout her other great recipes too.

One of my favorite cookies before being diagnosed were Pizzelle. They are light, crisp Italian cookies that are just delightful. You can flavor them however you like. I have a Pizzelle make that I bought from Taste Of Home, it makes Pizzelles, waffles and filled sandwiches. I made some rolled up cannoli shells, flat cookies and some dessert shells (add ice cream or fruit to them for a pretty dessert). You can also shape them into ice cream cones.

These tasted really good, I would say about 98% of what I remember from the gluten kind  :O)

Enjoy!
