Fall Is In The Air!

 
No gluten cheating going on here! Time to make some Pumpkin goodies! I have a week of cooking & baking ahead of me since we are heading out of town for some much needed fun! I'll give you an update on our fun at a later date as I don't have all the plans laid out just yet. I busy getting food cooked and packed for myself for the trip, always a fun job! lol.
 
As for our homeschool we are in full swing and getting ready to take our fall break. Love schooling year round, because we ca take off during our favorite seasons and fall is one of those times.

Time for a YUMMY recipe

Gluten Free Marble Cupcakes

I got this from a friend on a gluten free/casein free group. They are yummy and I just took my first batch out of the oven. I think the next batch I will skip the marble part, I'm not a big cocoa fan. But these are still really good!! Head on over to Marcie's blog for the recipe (click here)

NO milk, NO eggs, NO soy, NO wheat or gluten, NO tree nuts, NO peanuts, NO fish, NO Shellfish, yet these taste WONDERFUL!!

You can see one missing in the bottom right hand corner, I snatched on and ate it. YUM!!
And for those of you who are not big pumpkin fans, don't worry, these are not pumpkin flavored!! Though I am now thinking that when I leave the cocoa out of the next batch, that I might add in some pumpkin pie spice. I will report back on how that goes.

Eggs for Education

Our photo for "Eggs for Education" program. Thought we should start saving for college by selling eggs. Here is one of our pretty girls relaxing in the cool of the afternoon with her leg kicked out. She likes to lay like this...lol.  I just love to see her in the sunshine, the gold in her feathers is so pretty, it shines and sparkles. We've got tons of farm fresh brown eggs for sale.

My only complaint about the Gluten-Free/Dairy-Free Simplified Pantry is that it suggests using frozen meat in your crockpot/slow cooker, I DO NOT AGREE WITH DOING THIS. NOR DO I ADVOCATE DOING THIS.  I will admit to having done this in the past before I took a food sanitation class and learned that the meat ends up being 3 different temperatures while cooking in the crockpot/slow cooker. Some of the meat it hot, some cool and some warm, which ends up being a hot bed for bacteria growth. So each time you are doing this you risk harming your family with food poisoning (that flu bug that everyone seems to get can actually be caused by food poisoning).
 
This is for any level of cook, I did not come across anything at all that was too hard or had any weirdo ingredients. I printed out a copy of the PDF and took it to one of my gluten free cooking classes that I teach at our local college for the students to look it over. Many of the people commented that the recipes looked easy and doable.

The Simplified Pantry Blog has a few other products including a regular meal planner, Simplified Pantry. That has similar recipes to the gluten free/dairy free version. I did see some that were clearly gluten containing meals, but they could all be pretty easily converted to gluten free/dairy free recipes.

Both PDF and Kindle versions are available. This homeschool, unorganized, computer no-nothing Momma...lol. Loves this. Step by step instructions on how to set it all up. This has come at the perfect time for me. I have some summer free time to play with this and have it all up and running by the start of school. This is SOOO COOL!!! I totally recommend this.

Missed The Call From The Mayo Clinic Doctor :O(

Well as I was getting ready to teach a class at the local college, I noticed my cell phone vibrating. I did not have a missed call, but had a voicemail. Guess who? LOL (really that should be NLM or No Laughing Matter) It was my Mayo Clinic doctor calling with my results and also to tell me that he was going out of town for awhile. How on earth could this be that I missed his call. Though he did have some good news for me, he told me that my lab tests all came out fine, but that there was more to talk about and discuss. WHAT DOES THAT MEAN? Well I guess we will just have to wait until he gets back in town.

So we wait and wait and wait a bit longer. The child says "Mom, maybe the Lord wants to you to learn patience?"

I'm spending my days of waiting on the phone call by trying to unearth piles of junk mail that have accumulated while I have been ill. Boy does being ill bring about a whole new perspective on things. I am thrilled to be able to do housework again, is that weird or what? lol. Though leaning over into the washing machine to get that last sock out is a killer, I'm short and have to really lean into the machine and it hurts my body, I still feel very bruised if I lean on something. Hoping that will go away soon.

Happy Celiac Awareness Month!!

Happy Celiac Awareness Month!! Not really happy about it. lol. But that is ok, cause I feel so much better off gluten!  What are you doing to Celebrate? I'm teaching a gluten free cooking class called Bread & Sweets. Can't wait!! Lots of goodies cooking in the oven as I type.

Yummy Gluten Free, Corn Free, Dairy Free recipe

I was over at Confessions of a Homeschooler today and came across this recipe for Zuppa Toscana click here to find out what that is!! Zuppa Toscana Recipe. This recipe is so yummy looking, I plan to make it next week when I go shopping, I need to buy the sausage. Now you will notice that the recipe calls for sausage and bacon be sure to use corn and gluten free meats. A Closer Look At Gluten Free Food Labeling

Eating pre-packaged gluten free foods and all the sudden you feel ill? HHMMM.........might be because gluten free does not always mean free of gluten! Most foods labeled gluten free have 20 PPM (parts per million) of gluten in them and that is legal in the USA. Canada and Europe test down to 5 PPM (parts per million). So those with Celiac Disease or those that are highly sensitive can react to many gluten free foods even though the package says gluten free. How I Spent My Day & An Update On Me

After being in the hospital for 13 days (4 for surgery and then 9 for an infection after surgery) I got to know some of the staff and many of them had taken care of me both times I was in. I decided to fix up some treat bags for the staff that I could remember by name and also took a few large boxes of microwave popcorn for the rest of the staff. I would have made up more treat bags but many of the staff wore name badges backwards where you could not read their names :O(      So they missed out. My dear sister-in-law that is an RN brought in a big tray of cookies for the nurses one night during my stay. I was really shocked when I was walking down the hospital corridor when one of the nurses looked up and recognized me from a distance with street clothes on and a heavy coat. I've been out of the hospital since I think Feb 6th or 7th it's all a blur to me. She said "Well hello stranger!" That was a blessing to be recognized, again I NEVER felt like a number with this staff! As our son and I were leaving to head to the elevators I just cried, it is still very overwhelming to have gone through all this and to still be weak and not up to par.


The treat bags had gum, candy, suckers and chocolate in them, the black bag is special for one of the nurses that has Celiac Disease along with her children having it, so it's full of Hodgson Mill products and some other goodies. Hoping these treats are a blessing to them.

So our day started out like this I took our son to Chuck E Cheese since he had 90 tokens to use up from the past and present school year, I always check the coupon section of the website for when they have token specials, usually 100 tokens are $20 which those last a long time. I give them for doing well on math speed drills or pop quizzes. Sometimes if work is done really well with no complaints I will surprise him with 1 or 2 tokens. He keeps them in a baggie so he can just grab them when we are going to be near a Chuck E Cheese and he can spend them. Sometimes he likes to save them up and spend a few hours playing, other times he wants to run in and play a few games of Skee-Ball. Chuck E Cheese also has Chuck E Cheese Rewards Calendars that you can print out and get 10 free tokens for turning them in, they have chore charts, homework charts and more.

They now carry GLUTEN FREE PIZZA too!! It comes pre-made and individually wrapped, so you know it's SAFE! What a blessing for our little ones as well as adults. I do not know the corn status of the pizza, you would have to check that out. They also have a GREAT salad bar too.

So on to my day, while our son was playing games and having fun, I was sitting at a table packing up treat bags for the nursing staff and doctors. I found some Gospels of John at the Christian book store, but they only had 2 on hand  :O(     I gave one to my surgeon, his first name is Peter and I wrote in the book that I would have given him the book of Peter, but John was so much more exciting to read  ;-)

I was totally exhausted from my day of being out and about, plus I did not sleep but 2 hours the night before since I had to take a double dose of steroid meds for the blood test. I slept in the car on again off again. I had to be in town by 8am for a blood draw, slept for about 30 minutes in the car after that, went to the Christian book store, napped in the car for about 15 min, went to Chuck E Cheese, that was good since I was just sitting and not up and about. Then went to the grocery store, napped in the car for about 30 min after that and then delivered the goodies to 3 different places and napped in between those. This is all perfectly normal after having the surgery and then the infection. I should be back to normal by Summer. I actually feel pretty well, though if I over do it I KNOW IT! lol. I told my guys that I am not leaving the house for the next few days and will be sleeping as needed. I am still sore especially when I make the 100 mile trips to the doctors, and I did that 3 days in a row last week and I was hurting, felt like I was bruised on my entire torso from the bumpy roads.

We have some great products to review for The Old Schoolhouse Magazine Review Crew coming up so we will be working on those. School is going well, so glad that we skipped Christmas break so that our son could take a winter break while I had my surgery, it worked out well since I have had a longer recovery time. We started back to full time school this past week, while he was at Grandpa's house he dabbled in math, science, history and of course his favorite subject reading.

Life is a Wild Ride!

Wow, hard to believe that I was in the hospital in Dec 2012, Jan 2013 and Feb 2013. It just amazes me how time flies, I don't really even remember celebrating Christmas or New Years. It's all just a blur. I am sure thankful that my Lord and Savior sees things clearly.

I am actually feeling pretty well, sore of course, they were not able to do the procedure lapriscopically since I am short wasted, there was not enough room to work in there, so they had to do it the old fashioned way. So I have a C-section like cut (not as wide as a C-section, but same spot & no baby to show for it though :*( 
and then 2 other incisions. I mainly feel like I am bruised inside. I can be up for around 15 min or so and then I have to sit down to rest. Sitting is fine, driving has been fine, but it's when I try to expend any energy to talk or walk that I'm wiped out. I was told that even if I tried to push myself it would not work, my body would just shut down........lol.. Saw this happen yesterday when I let our son check out some library books and I fell asleep in a chair, then we went to pick up chicken feed and I ended up falling asleep while waiting in the car. Just a nice catnap of around 20 min perks me up. But then I have to rest again pretty quickly. Makes me think that this is how my mom must have felt when she was on Chemo  :O(


I saw this online and just had to put it on my blog! Thanks to all my special girlfriends who have called, texted or emailed me to perk me up over the last few months. You have all been great, even when I was too tired to talk back, I just laid in bed holding the phone listening to what was going on with your families. Thanks gals!

I am on an all protein diet since my protein is very low. For some reason my body is burning up muscle tissues and turning that into glucose to burn, instead of burning fat. Protein is NOT really what I want to eat when I'm sort of queasy still, but I'm working on it. I go see the endocrinologist next week about some stuff that they are looking into. Not sure what to expect there and they have talked of another surgery for that.

Otherwise things are going well, I'm enjoying being on The Old Schoolhouse Review Crew and getting to try and play with new homeschool curriculum, our chickens have started laying eggs again, which reminds me I can make some Meringue cookies (egg whites are full of protein!) for my new diet I have to follow for the time being.....lol.

Prayers would be appreciated for my guys, it's hard on them, and it drives me crazy that I can't do anything. If I load the washing machine I have to sit down before I can add soap and turn it on.........lol. If I unload the dishwasher I have to unload, sit, load, sit. It just stinks all the way around. And we are looking at the start of summer before this gets better.

Gluten Free Class Tonight & A Slight Glitch!

Well I had the privilege of spending an evening with an awesome group of people!! It was sad to see how many had suffered and doctors did not seem to be helpful for them. Hoping that each came away with some encouragement that they are not alone in this. Though at times it does feel very lonesome.
 
 As for the glitch, I had planned to make Bob's Red Mill Pizza Crusts and when I opened my box from Amazon.com.....lol, I saw flour inside the outer box, I lifted out the 4 pack of pizza crust mix and the bottom of the case was broke open. All the bags had some how popped open and were spilled all over. I'm thinking that in shipping a heavy box got put on top of it and the weight popped the bags open. It was a mess just as we were leaving to head to the class. Called Amazon.com and they shipping 2 new cases overnight to me.......yeah for a company with EXCELLENT customer service!!!!

Gluten Free Cooking TV Show TODAY

I am pretty excited about being on the CI Living TV show this afternoon doing a gluten free segment. I will post a link to the program tonight. I have a lot of fun things planned and have a Super Bowl Sunday Gluten Free Party theme going for the show. I am also going to be promoting some gluten free cooking classes that I will be teaching in the coming days. I am very thankful for the goodies that Hodgson Mill, Good Naber Specialty Foods, BetterBatter.org and Living Without magazine provided. They all sent samples, coupons and a copy of the Living Without magazine. BetterBatter.org and Hodgson Mill sent me full size products to play with in class too!! YIPPEE!! I Can ____________ in 2013!

Well 2013 is upon us and in thinking about how 2012 went, I need a word to help me get through this new year!  My word for the 2013 year is CAN.

 

  • I am going to think of all the things that I CAN do to improve my health.
  • Think on things that I CAN eat (that is hard to do with numerous food allergies).
  • On the bad days, how CAN I make it better?
  • On the good days what CAN I do?
  • How CAN I impart wisdom and knowledge into my only child?
I'm pretty excited about this list and CAN hardly wait to add more to it!

My Favorite Gluten Free Recipes from 2012

Here is a run down of my favorite recipes that I've made in 2012, thought this might be helpful to those planning Super Bowl Sunday Parties!!  Lots of easy snacks for us to enjoy and bring to parties. No one will ever guess these are gluten free!

Gluten Free Chicken Nuggets/Chicken Wraps

Use the directions on the back of the Hodgson Mill Gluten Free Seasoned Coating Mix box for Fried Vegetables with one change, cook until the chicken is done.

Ingredients

5 Tbls. Hodgson Mill Gluten Free Seasoned Coating Mix

1 egg

2 Tbls water

extra Hodgson Mill Gluten Free Seasoned Coating Mix (to dredge meat in)

1 lb boneless skinless chicken breast cut up into nugget pieces or into strips for Chicken Wraps

gluten free oil for frying

Make batter by mixing 5 Tbls of Hodgson Mill Gluten Free Seasoned Coating Mix with egg, then add water and stir. Dip chicken into batter and then roll in dry Hodgson Mill Gluten Free Seasoned Coating Mix. Place in hot oil and fry for 3-6 minutes or until internal temperature reaches 165. Drain and serve hot or let cool and freeze for quick and easy meals.

For Chicken Wraps, use large washed lettuce leaves to wrap chicken strips in, add gluten free toppings to your liking (cheese, salsa, mayo etc). Wrap lettuce around chicken and serve.

 Country White Gravy

This is so wonderful to dip the gluten free Chicken Nuggets in, reminds me of the good old days of gluten eating at DQ Chicken Strip Baskets! lol.......

2 Tbls butter (or non dairy margarine)

2 Tbls Hodgson Mill Gluten Free Seasoned Coating Mix

1 cup milk (reg, soy, almond)

Melt butter in skillet and then add seasoned coating mix, stir until smooth. Blend in milk and simmer and stir until the gravy is desired thickness.

Gluten Free Fried Mushrooms

Use the directions on the back of the Hodgson Mill Gluten Free Seasoned Coating Mix box for Fried Vegetables.

Ingredients

5 Tbls. Hodgson Mill Gluten Free Seasoned Coating Mix

1 egg

2 Tbls water

extra Hodgson Mill Gluten Free Seasoned Coating Mix (to dredge veggies in)

gluten free oil for frying

White button mushrooms or you could use zucchini, okra, eggplant, onions, cauliflower, green tomatoes, broccoli, chunks of cheese (be careful as cheese likes to melt in the oil, but they still taste good!)

Make batter by mixing 5 Tbls of Hodgson Mill Gluten Free Seasoned Coating Mix with egg, then add water and stir. Dip veggies into batter and then roll in dry Hodgson Mill Gluten Free Seasoned Coating Mix. Place in hot oil and fry for 2 minutes or until browned. Serve hot, these do not freeze well as they turn soggy. My guys do like the leftovers cold for breakfast.

Gluten Free Peanut Butter Cookies

Preheat oven to 350.

Ingredients

2 eggs

2 cups peanut butter (I use natural peanut butter)

2 cups sugar

2 Tbls gluten free Vanilla (the more the better!)

If using natural peanut butter, add it first to the mixer and get the oil all mixed in, other wise if using regular peanut butter just add everything at once.

Mix all together and spoon out on to cookie sheet. I use my small cookie scooper, then using a fork mash the cookie down and sprinkle with sugar if desired. Bake 8-10. Freeze, these are so good right out of the freezer!

Makes about 2 dozen large cookies and tons more if you make them smaller

Gluten Free Peanut Butter Kiss Cookies

Using the above recipe add Gluten Free Chocolate Kisses (use dairy free if needed) to each cookie after they come out of the oven and let cool.

Gluten Free Peanut Butter Chocolate Chip Cookies

Using the above recipe add a bag of Gluten Free Chocolate chips to the mix. (use dairy free chips if needed).

 Gluten Free Pizzelle Cookies
These are from the EZ Gluten Free blog but I have tweaked the recipe a bit below. These are so yummy and easy!! Head on over to the EZ Gluten Free's blog for step by step video instructions for making Pizzelle cookies, she has some tasty suggestions in the video too.

Ingredients

1 ¾ cups gluten free Bisquick

3 large eggs

1 cup granulated sugar

½ cup butter, melted (I used dairy free)

2 tbsp of gluten free vanilla extract
 
Add the vanilla to the melted butter and set aside. Whisk together the eggs and sugar until well combined.

Add the melted butter and vanilla in a slow steady stream while continuing to whisk until well blended.

Add the Bisquick and using a rubber spatula stir everything together until just combined but don’t over mix.

Pizzelle Presses are all different so follow the instructions that come with your particular machine. Bake them on the grids for the length of time needed to achieve your preferred level of darkness. I like them a bit darker as they seem to have a caramel flavor to them.
 
   Gluten Free Chocolate Dipped Pizzelle Cookies

Melt gluten free chocolate, roll up hot Pizzelle Cookies and dip in chocolate, lay on plate in freezer to allow chocolate to harden.

Gluten Free Bacon Wrapped Olives

 Ingredients

24 pimento stuffed green olives with liquid drained.

6 slices of raw gluten free bacon

24 toothpicks

Heat oven to 450 or use your broiler.

Cut each bacon slice into 4 pieces, wrap each piece around an olive and spear with toothpick. Place on cookie sheet with sides (to catch grease). Bake for 5 or more minutes, until bacon is crisp and done. It depends on the type of bacon and the thickness.  Drain on paper towels and serve hot.

Gluten Free Meringue Cookies

Ingredients

2 egg whites
1/8 tsp. salt
1 tsp gluten free vanilla
3/4 c sugar

Preheat oven to 300.
Put parchment paper on cookie sheet.
Beat egg whites, salt and vanilla until VERY firm, this took about 12 minutes with my old cheap mixer and about 4 min with my KitchenAid.  Gradually add sugar and mix. Drop by spoonfuls on cookie sheet. Bake for 25 min. They should be lightly brown. Cool on rack.
Sometimes if I have the time I will fill a cake decorater bag with the cookie mix and use a star tip to make fancy looking cookies. But they taste just as good when they are made using a teaspoon. Makes any where from 2 dozen or more cookies, depending on the size you make.

Gluten Free Chocolate Chip Meringue Cookies

Using the above recipe fold in 1 cup of gluten free mini chocolate chips (use dairy free if needed).

Pizzelle Cookies: gluten & corn free!

I did some cooking yesterday, I found some Gluten Free Bisquick at our local salvage store for $2.49: that is a BARGIN! It's almost $5.00 a box at our grocery store. I found the Pizzelle recipe on the ezgf blogspot checkout her other great recipes too.




 One of my favorite cookies before being diagnosed were Pizzelle. They are light, crisp Italian cookies that are just delightful. You can flavor them however you like. I have a Pizzelle make that I bought from Taste Of Home, it makes Pizzelles, waffles and filled sandwiches. I made some rolled up cannoli shells, flat cookies and some dessert shells (add ice cream or fruit to them for a pretty dessert). You can also shape them into ice cream cones. 

These tasted really good, I would say about 98% of what I remember from the gluten kind  :O)
